David Rotman opened Cafe Aspen almost two decades ago. He was 21 years old and a student majoring in communications and sociology at Texas Christian University. David had made it known to friends that he was looking for a business opportunity. Although he knew nothing about food, he did know the value of customer service. He arranged for financing and began his restaurant legacy.

Cafe Aspen's menu has evolved over time, but the concept is the same ~ that of contemporary American eclectic cuisine. Cafe Aspen's menu changes every three months, but customers can still get their favorite dishes prepared upon request.
